High Tide is our homage to Robert Mondavi's famous quote “the high tide raises all ships,” which was his approach when promoting the Napa region as a community with a common goal to compete amongst the world's best.
This wine is a holistic expression of Cabernet Sauvignon representative of Napa Valley as a whole. Sourced from pieces of all of our single vineyard lots, this strikes incredible balance between muscular mountain fruit and plush valley floor sites. Each piece is meticulously balanced in the blend to showcase the diversity and glory of the region. We chose to add 12% Merlot to this blend to increase color density and add a juicy characteristic balancing the big Cabernet Sauvignon profile.
Profile
The palate mirrors the aromatic complexity, delivering a balanced and layered expression of Napa Valley Cabernet Sauvignon. Rich black fruit flavors of blackberry, cassis, and dark cherry are at the forefront, displaying a concentrated yet refined fruit core. The Merlot component contributes a juicy mid-palate and enhances the plushness of the fruit, adding a layer of red plum and black cherry compote. Oak influence is seamlessly integrated, providing a subtle framework of vanilla, spice, and a touch of toast without dominating the fruit. Subtle earthy notes and a hint of dark chocolate emerge as the wine opens up, providing further complexity and a grounding savory element. The fruit is beautifully balanced by a vibrant freshness, preventing the wine from feeling heavy and ensuring a long, energetic, and mouthwatering finish.
Appearance: Deeply saturated ruby to purple core, radiating outwards to a vibrant, youthful garnet rim. The color is dense and concentrated, hinting at the wine's richness and depth, further enhanced by the Merlot in the blend. The wine displays excellent viscosity, clinging to the glass with slow, deliberate tears, suggesting a full-bodied and richly textured wine. Crystal clear and brilliant, reflecting meticulous winemaking.
Aroma: The nose is immediately inviting and expressively aromatic, showcasing the diverse terroir of Napa Valley Cabernet Sauvignon. A harmonious blend of both black and red fruit aromas emerges, reflecting the combination of mountain and valley floor fruit. Ripe blackcurrant, blackberry, and dark plum are prominent, representing the Cabernet Sauvignon, while notes of red cherry and plum from the Merlot add a layer of juicy vibrancy. Elegant oak influence is beautifully integrated, presenting notes of vanilla bean, cedar spice, and subtle clove. Beneath the fruit and oak, intriguing nuances of graphite, dried herbs, and a hint of violet add complexity and a savory edge, reflecting the diverse vineyard sources across Napa Valley. The aroma is generous and layered, promising a wine of balance, depth, and regional character.
Winemaker notes
Night harvest for early processing; completely destemmed prior to cold soak. All vineyard lots are hand-picked and fermented separately. Musts were gently warmed during primary fermentation while malolactic fermentation occurred in barrel.
